Fajitas

Fajitas are such a great meal to share and come together fairly easy. Don’t let the list of ingredients or steps intimidate you, I promise it is way less complicated than it appears. Also, in my recipe I am doing both steak and chicken but you could just opt for one! You can also cook the veggies in the same pan as the meat, I just prefer to do mine separately because it allows for a better char on the vegetables and doesn’t overcrowd the pan. This is a fun meal for a crowd and can be great for parties since you can let everyone customize their own plate!

For the Chicken:

  • 1Lb Chicken Breast, Sliced
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 2 Tsp Cumin
  • 2 Tsp Smoked Paprika
  • 1/2 Tsp Chili Powder
  • 1/4 Tsp Cayenne Pepper
  • 1/2 Tsp Dried Basil
  • 1/2 Tsp Dried Oregano
  • Salt + Pepper, To Taste
  • 1/2 Cup Red Enchilada Sauce
  • 5 Garlic Cloves, Thinly Sliced
  • 1 Lime, Juiced

For the Steak:

  • 1Lb Flank or Skirt Steak, Sliced
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 2 Tsp Cumin
  • 2 Tsp Smoked Paprika
  • 1/2 Tsp Chili Powder
  • 1/4 Tsp Cayenne Pepper
  • 1/2 Tsp Dried Basil
  • 1/2 Tsp Dried Oregano
  • Salt + Pepper, To Taste
  • 1/2 Cup Red Enchilada Sauce
  • 5 Garlic Cloves, Thinly Sliced
  • 1 Lime, Juiced

For the Fajita Veggies:

  • 1 Red Bell Pepper, Sliced
  • 1 Yellow Bell Pepper, Sliced
  • 1 Orange Bell Pepper, Sliced
  • 2 Yellow Onions, Sliced
  • 2 Tsp Cumin
  • Salt + Pepper, To Taste
  • 4 Garlic Cloves, Thinly Sliced

For the Crema:

  • 1 Cup Plain Greek Yogurt
  • 1/2 Cup Cilantro, Packed
  • 2 Limes, Juiced
  • 4 Garlic Cloves
  • 1-2 Tsp Salt, To Taste
  • 1 Roasted Jalapeno, Seeds Removed (Optional)

Additional Ingredients:

  • Cumin Black Beans
  • Sliced Avocado
  • Salsa
  • Tortillas
  • Shredded Cheese
  • Lime Wedges

To Make the Fajita Veggies:

  1. Heat a cast iron (or regular pan) over large heat. Add in the sliced bell peppers and onions and allow to char for about 5 minutes, stirring occasionally.
  2. Reduce the heat to low-medium and cook the vegetables for another 6-8 minutes until they start to soften.
  3. Once they soften, add in the garlic cloves, cumin and salt + pepper and stir to mix well. Continue cooking the vegetables for another ~10 minutes until they are fully soft.
  4. Remove and set aside until ready to serve.

To Make the Chicken and Steak:

  1. Grab 2 large mixing bowls.
  2. Add the chicken to one bowl and all the ingredients listed under the chicken. Toss to mix together and ensure the chicken is evenly coated.
  3. In the other bowl, add the steak and all the ingredients listed under the steak. Toss to mix together and ensure the steak is evenly coated.
  4. Set both of the meats aside and allow them to marinade for 10-15 minutes.
  5. When ready to cook, cook them separately as they will need different cooking times.
  6. For the chicken, heat a large pan over medium heat and spray the pan with pam (or lightly coat with olive oil). Once hot, add the chicken and cook, stirring frequently, for 12-15 minutes until the chicken is cooked all the way through.
  7. For the steak, heat a large pan over medium heat and spray the pan with pam (or lightly coat with olive oil). Once hot, add the steak and cook, stirring frequently, for 10-12 minutes until steak is medium rare.
  8. Serve the chicken and beef with the vegetables and any additional toppings you are using!

For the Crema:

  1. In a food processor or blender, add all the ingredients listed under cream and blend until smooth.
  2. Transfer to a bowl and serve!
