
I love mediterranean food – the flavors are so delicious and I could honestly eat hummus by the spoonful. It winter and I want to eat things that are warm and comforting but also that still nourish my body and won’t leave me sluggish. I developed this recipe just for that! The warm naan and chicken kofta are perfect on a chilly day and the veggies and tzatziki help to brighten and lighten the dish! I know for me, this time of year is filled with extra indulging and I don’t want to sacrifice flavor if I want to try to eat a bit healthier. This dish is perfect if you are wanting to balance the sweets and sugar and opt for a healthier, less heavy dinner option during the holidays.
For the Chicken:
- 1 Lb Ground Chicken
- 1 Cup Diced Onion
- 1 Tbsp Minced Garlic
- 1 Tbsp Turmeric
- 1/2 Tbsp Cumin
- 1/2 Tbsp Onion Powder
- 1/2 Tbsp Basil
- 1/2 Tbsp Oregano
- 1/2 Tbsp Zaatar
- 1 Tsp Paprika
- 1/2 Tsp Coriander
- 1/2 Tsp Cardamom
- 1 Egg
For the Tzatziki:
- 1/2 Cup Plain Greek Yogurt
- 1/3 Cup Sour Cream
- 1 Tbsp Dill
- 1/2 Lemon, Juiced
- 1/4 Tbsp Red Wine Vinegar
- 1 1/2 Tbsp Minced Garlic
- 1/3 Cup Cucumber, Diced
- Salt + Pepper
Optional For Serving:
- 4-6 Flatbread/Naan
- 1/4 Cup Kalamata Olives Diced
- 1 Cup Cherry Tomatoes, Diced
- 1/2 Cup Feta
- 1 Cup Cucumber, Quartered
- 1/2 Cup Hummus
- Serves: 4-6
- Prep Time: 15 Minutes
- Cook Time: 30 Minutes
- Total Time: 45 Minutes

To Make:
- Heat the oven to 350 degrees Fahrenheit.
- In a large mixing bowl, combine the ground chicken, diced onion, garlic, turmeric, cumin, onion powder, basil, oregano, zaatar, paprika, coriander, cardamom and egg. Mix until well combined.
- Take about 1/4-1/3 cup of the chicken mixture and form in to a long, circular shape (the shape of a sausage) – it should be about 1 inch in diameter and about 3-4 inches in length. Repeat this step until all the ground chicken has been used. This should make roughly 6.
- Place the formed chicken on a baking sheet and place in the oven. Cook for 20-25 minutes until chicken is cooked through.
- While the chicken is cooking, prep the remaining ingredients.
- First let’s make the tzatziki sauce – in a bowl add the greek yogurt, sour cream, dill, lemon juice, red wine vinegar, and minced garlic. Mix together to combined. Next, add in the diced cucumbers and stir. Set aside until ready to use.
- Once the chicken is done cooking, it is time to assemble.
- Add 1 piece of chicken to a piece of naan and if using top with tomatoes, olives, cucumber, hummus and feta. Lastly, drizzle tzatziki on top and enjoy!
