Peach Prosciutto Burrata Salad

I am not going to claim this recipe as a 100% original thought – I have seen many people putting together similar flavor combinations with peaches being a huge foodie vibe this summer. I will however say that I have never seen anyone put all of these ingredients together in one dish – so that is unique. I have seen a lot of peaches + burrata; or burrata + honey – so while this is not an original creativity, I did take components of many different flavor profiles and textures to combine them in to one stunning dish that I think is more elevated than the ones I have seen. I love this dish because you get the smokiness from the grilled peaches, the creaminess from the burrata, a slight sweetness from the honey, salt from the prosciutto, crunch from the pistachios, and of course the freshness from the tomatoes. So many things working here that you would think it would be a bit much, but in this recipe the ingredients really work together and compliment each other!   • 2 Peaches, Ripe
  • 4-5 Slices Prosciutto
  • 2 Balls Burrata
  • 1 1/2 Cups Heirloom Tomatoes, Sliced (my local Trader Joe’s sells heirloom tomatoes in cherry tomato form, if you can grab those they are the perfect size cut in half, if not dice regular heirloom tomatoes large).
  • 1/4 Cup Pistachios
  • 2 Tbsp Honey
  • Optional: Sourdough, Pita, Crackers, Flatbread
  • Serve: 2-4
  • Prep Time: 20 Minutes
  • Assembly Time: 5 Minutes
  • Total Time: 25 Minutes

To Make:

  1. Let’s start with the peaches. Sliced them in half, carefully, and remove the pit. I grilled my peaches on the grill at 350 degrees for about 10-15 minutes. You can do this on the stove top as well – heat a pan over medium and drizzle a small amount of oil (to prevent the peaches from sticking) and cook the peaches for 10-12 minutes. The goal here is to bring out the natural sweetness in the peaches and grilling/cooking them makes them incredible delicious.
  2. While the peaches cook, slice the tomatoes and finely chop the pistachios.
  3. When the peaches are done, slice them up!
  4. Now time to assemble – grab a shallow bowl or plate. Add the burrata (make a slit through the top to almost cut it in half, but don’t cut all the way through – you just want the creamy center to start coming out).
  5. Add in the tomatoes and peaches – spreading throughout the dish evenely. Rip the prosciutto and add throughout the dish as well.
  6. Lastly, sprinkle with the pistachios and drizzle with the honey. Serve with your favorite bread or just eat with a fork!
