- 1lb Orzo Pasta, Cooked and cooled completely
- 2 Cups Spinach, Chopped
- 2 Cups Cherry Tomatoes, Sliced
- 1 Cup Roasted Red Pepper, Diced
- 1 Cup Kalamata Olives, Chopped
- 1 Cup Crumbled Feta
- 1/2 Lemon, Juiced
- 1 Tbsp Minced Garlic
- Serves: 6-8
- Prep Time: 20 Minutes
- Total Time: 30 Minutes
To Make:
- Cooked the orzo according to the package and allow to completely cool – for extra flavor cook your orzo in vegetable or chicken stock instead of water.
- Add all of your ingredients in a large bowl and mix together well.
- Serve and enjoy!
