Shrimp Tostada

These are such a fun and easy week day meal that takes less than 30 minutes from start to finish! Shrimp are also a wonderful source of protein and they cook so incredibly fast, so I always keep some on hand for when I am feeling lazy. These tostadas can be as creative or simple as you want and everyone can build their own if you set out all the toppings! Try these for your next taco tuesday!

  • 1 Lb Shrimp, Peeled
  • 1/4 Cup Red Enchilada Sauce
  • 1 Lime, Juiced
  • 2 Tsp Salt
  • 1/4 Tsp Black Pepper
  • 1 1/2 Tsp Smoked Paprika
  • 1 Tsp Cumin
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Garlic Powder
  • 4-6 Tostadas
  • Optional Toppings: Cilantro, Diced Onion, Pickled Onions, Crema, Oaxacan Cheese

To Make:

  1. In a large bowl, add the enchilada sauce, lime juice, salt, pepper, smoked paprika, cumin, onion powder and garlic powder and stir to mix well.
  2. Add in the peeled and cleaned shrimp and set aside to marinate for at least 10-20 minutes.
  3. Once they have been marinating, skewer them on to metal skewers (if using wood, make sure to read the package as they need to be soaked ahead of time). I usually put about 6-8 shrimp per skewer.
  4. Heat the grill to 400 degrees Fahrenheit and once hot, carefully place the shrimp on the grill and cook for 4 minutes.
  5. Flip and cook for another 4 minutes.
  6. Turn off the grill and remove the shrimp, transferring them to a plate.
  7. Taking one tostada, add a spoonful of black beans to the bottom (if using) and top with 4-5 shrimp per tostada. Top with crema, cilantro, pickled onions, and cheese and serve!
