Pollo Asado Tacos

By now I think everyone knows my love of tacos. They are so delicious and easy and have tons of variety so they never get boring. This recipe is one I make probably on a weekly basis because it is so easy and simple. On week nights, I try to keep my recipes simple and it can be tough to find the motivation and time to cook some nights. That is why these are so perfect because they come together in about 30 minutes and everyone loves them! For these, I stick with the classics for toppings – diced onions, cilantro, cheese, crema and hot sauce. For the Chicken:

  • 4 Chicken Breasts, Cubed
  • 2 Limes, Juiced
  • 2 Tsp Cumin
  • 3 Tsp Smoked Paprika
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/3 Cup Red Enchilada Sauce
  • 2 Tbsp Minced Garlic

For the Crema:

  • 1 Cup Plain Greek Yogurt
  • 3 Garlic Cloves
  • 2 Limes, Juiced
  • 1 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/3 Cup Packed Cilantro

Additional Ingredients:

  • 10-12 Tortillas, Flour or Corn
  • Diced Onion
  • Feta Cheese
  • Lime Wedges
  • Cilantro, Finely Chopped
  • Hot Sauce/ Taco Sauce

To Make the Chicken:

  1. In a large mixing bowl, add in the lime juice, cumin, smoked paprika, onion powder, garlic powder, salt, pepper, enchilada sauce and minced garlic. Stir to combine and add in the cubed chicken breast. Cover and allow to marinate for 30-60 minutes.
  2. When you are ready to cook, skewer the chicken on metal skewers (if using wood, make sure to soak them according to the package so they do not catch fire).
  3. Heat the grill to 450 degrees fahrenheit. Once hot, carefully place the chicken skewers on the grill. Cook for 5 minutes then rotate and cook for another 5 minutes. Repeat until all sides have been rotated so there are grill marks on each side. On the last rotation, cover the grill and cook for 5-8 minutes to ensure the chicken is cooked through.
  4. Turn off the grill and transfer the chicken to a plate.
  5. Remove the chicken from the skewers and serve on tortillas with the crema and any additional toppings you want!

To Make the Crema:

  1. Add all the ingredients under crema to a food processor or blender and blend until smooth.
  2. Transfer to a bowl and drizzle on top of the tacos!
