
Summer isn’t just for fresh fruits – it is also for delicious vegetables! This recipe really highlights the simple zucchini and all it has to offer. Fresh zucchini can be so delicious if you prepare it well. Grilling or roasting it brings out a slight sweetness that doesn’t require much more than salt and pepper to make it pop! This simple dish tastes incredible and elevates the humble zucchini – all you need is a few ingredients and about 30 minutes of time to make this. Perfect for a dinner party, BBQ, or just a vegetarian friendly dinner or snack. This toast is crunchy, creamy, sweet and salty. For an elevated flavor, I drizzled on some fig balsamic for a bit of a tangy punch. This part is completely optional, but I do think it takes that dish to the next level and brings even more flavor.
- 2 Zucchini
- 1 Baguette
- 2 Cups Ricotta
- 2 Tbsp Minced Garlic
- Olive Oil
- Salt + Pepper, To Taste
- Optional: Balsamic for Topping

To Make:
- This recipe goes pretty quick, so it is important to have everything prepped and ready! Start by thinly slicing the baguette into ~1/4″ – 1/3″ slices and set aside. Next, slice the zucchini at a diagonal angle in to 1/3″-1/2″ slices.
- Let’s also prep the ricotta – add the ricotta to a bowl and sprinkle in salt and pepper to taste.
- Now that we have everything in place, we are going to toast the bread and grill the zucchini simultaneously. For the bread, I am using the stovetop method, but you can use your oven or toaster oven to toast the bread.
- Heat a large pan over medium heat and add a drizzle of olive oil. Add in the baguette and cook for 4-5 minutes.
- While one side of the baguette is cooking, heat another large pan over medium heat and add in a drizzle of olive oil and the garlic. Add in the zucchini and cook for 4-5 minutes.
- While the zucchini cooks, flip the baguettes over and continue cooking for another 4-5 minutes.
- Moving back to the zucchini, flip and continue cooking for another 4-5 minutes.
- Repeat steps 4-7 until all the baguette and zucchini have been cooked.
- When everything is ready, it is time to assemble! Take a baguette and add a spoonful of ricotta and spread evenly. Top with 2-3 slices of zucchini and drizzle with balsamic* (optional). Repeat until all the baguette has been used and serve!
