Cinnamon Brown Sugar Carrots

A friend recently reached out asking for the carrots I made at Thanksgiving last year so he could make them. I realized that I had just thrown some ingredients on the pan and they turned out better than I could have imagined! I sent him what I could remember, but knew I needed to recreate this and actually measure and write down what I did! So I spent the weekend testing this recipe and finally arrived at the deliciousness I had previously made! These carrots are soft and sweet – the brown sugar and butter melt together to caramelize in the oven, resulting in the best tasting carrots I’ve ever indulged in.

  • 1lb Carrots, Sliced
  • 1 Tbsp Oil
  • 1 Tbsp Cinnamon
  • 1 Tsp Basil
  • 1/2 Tsp Salt
  • 1/3 Cup Brown Sugar
  • 2 Tbsp Butter
  • Serves: 2-4
  • Prep Time: 5 Minutes
  • Cook Time: 15 Minutes
  • Total Time: 20 Minutes

Step 1: Preheat the oven to 450 degrees Fahrenheit. Meanwhile, arrange the carrots on a baking sheet. Drizzle with the oil and add the salt, basil, and cinnamon. Using your hands, toss the carrots on the baking sheet to evenly coat.

Step 2: Spread the carrots in a single layer on the baking sheet. Top with the brown sugar – making sure to spread it evenly across all the carrots.

Step 3: Spread the butter over the carrots placing small amounts throughout the baking sheet. Place in the oven and roast for 15 minutes. Serve and enjoy!
