Chipotle Salmon with Creamy Lime Sauce

Tangy, spicy and creamy – oh my! This is what you’ll get from this dish. A perfect balance of smokiness, acidity and heat that will have you wanting to eat this everyday. Salmon is a great fish that isn’t too fishy, but still has a nice, mild flavor. This dish is inspired by a burrito bowl featuring cilantro-lime rice, black beans, fresh avocado, chipotle salmon and a delicious, creamy lime sauce. My favorite part of this dish is honestly the lime sauce – it is roasted jalapenos blended with sour cream, cilantro and of course lime juice! It has a wonderful flavor and will give you a tang of lime juice and wonderful smoky notes that blend together for an incredible sauce. I could eat this by the spoonful and put it on everything!

For the Salmon:

  • 2 Salmon Fillets
  • 1 Tbsp Honey
  • 1 Chipotle, FInely Diced + 1 Tsp Sauce from the Can
  • 1 Lime, Juiced
  • 1/4 Cup Olive Oil
  • 4 Garlic Cloves, Thinly Sliced
  • 1 Tsp Chili Powder
  • 1 Tsp Cumin
  • 1 Tsp Salt

For the Creamy Lime Sauce:

  • 1 Jalapeno, Roasted
  • 1/4 Cup Cilantro
  • 1/2 Cup Sour Cream
  • 3 Garlic Cloves
  • 1/2 Lime, Juiced
  • 1 Tsp Salt

Optional for Serving:

  • Black Beans
  • Cilantro Lime Rice
  • Lime Wedges
  • Avocado
  • Roasted Jalapenos
  • Chopped Cilantro
  • Serves: 2
  • Prep Time: 10 Minutes
  • Cook TIme: 20 Minutes
  • Total Time: 30 Minutes

To Make:

  1. In a medium bowl, whisk together the honey, lime juice, olive oil, cumin, chipotles + sauce, garlic, chili powder, cumin and salt.
  2. Using a paper towel, completely pat the salmon dry and place in a shallow bowl. Pour the marinade on top to completely cover and set aside to marinade for 10 minutes.
  3. While the salmon rests, let’s make the lime sauce.
  4. In a blender or food processor, add the sour cream, roasted jalapeno (for more heat keep the seeds, for less heat remove the seeds first), lime juice, cilantro, garlic, and salt. Blend together until well blended and creamy. Transfer to a bowl and set aside.
  5. Heat a large pan over medium heat. Once hot, add the salmon – skin side down – and cook for 8 minutes. Carefully flip the salmon and continue cooking for another 8-10 minutes until the salmon is cooked through (*the time will depend on the thickness but you want the salmon to be a dull pink all the way through).
  6. Once the salmon is cooked, time to plate. Add one salmon fillet to each plate and top generously with the lime sauce. If using, serve alongside rice, beans and fresh avocado!
