Rotisserie chicken is such a convenient lunch, dinner, or snack – but let’s be honest, it can be challenging figuring out what to do with all that chicken so you’re not eating the same thing all week. So I have created 3 different recipes using the whole rotisserie chicken to step up your meal game! These 3 recipes are different flavor profiles, but equally easy and delicious. Below you will find the classic go to – chicken salad; a warm and cozy chicken chili; and very versatile chicken street tacos! First – break down the rotisserie chicken. This is easiest when the chicken is still warm, so if you aren’t planning on using the chicken right away, I highly recommend getting all the meat off and storing in a bowl in the refrigerator until you’re ready to use!
