
I love tacos – like love them. They are easy, delicious, and you can be creative with them. There are so many options and different toppings that make them great for pleasing the entire family – or just your significant other. This recipe is also perfect for an easy week night dinner because it is quick and allows everyone to customize their dinner. No more making different dinners for each person in the household.. just buy the toppings they enjoy, and let them go to town! This is also a great recipe to let the kids get involved. The base of this recipe comes together in about 15 minutes and is full of flavor from the green chilis and the pre-made simmer sauce.
- 1/3 Rotisserie Chicken
- 1/4 Onion, Sliced
- 1 Tbsp Oil
- 2oz Canned Green Hatch Chilis
- 1/3-1/2 Cup Frontera Simmer Sauce, I used the Fajita Chipotle Lime but feel free to use any of them!
- Tortillas
- Optional Toppings: Shredded cheese, diced onion, salsa, sour cream, avocado, cilantro, lime
- Makes: 6-8 Tacos
- Prep Time: 5 Minutes
- Cook Time: 15 Minutes
- Total Time: 20 Minutes


Step 1: Heat a medium pan over medium heat and add the oil. Once hot, add the sliced onion and cook until tender, about 5-7 minutes.
Step 2: Add the chicken and chilis and stir until combined.


Step 3: Add the simmer sauce and reduce to low. Cook for another 10 minutes until heated through.
Step 4: Add chicken on the tortillas and top with your favorite toppings! Serve and enjoy!
