GoChuJang Shrimp Bowls

My inspiration for this bowl was the viral tiktok salmon a while back. But I wanted to create this version with shrimp and more toppings to get a variety of flavors and textures. The shrimp is spicy and warm that contrasts the cold, tangy carrots! I love mixing all the ingredients up and taking a little bit of everything on top of the seaweed for the perfect bite! With this recipe I also prefer seasoned rice to add more flavor. You can make seasoned rice by adding a touch of sugar and rice vinegar and mixing it together before adding to the rice! It really helps elevate the flavor profile. This colorful dish is a must try, so save this recipe for later!

For the Shrimp:

  • 1 Lb Shrimp, Peeled and Deveined
  • 3 Tbsp GoChuJang
  • 2 Tbsp Miso Paste
  • 3 Tbsp Rice Vinegar
  • 3 Tbsp Soy Sauce
  • 1 Tsp Minced Ginger
  • 2 Tsp Minced Garlic

For Serving (all optional):

  • 1 Cucumber, Thinly Sliced
  • 2 Cups Seasoned Rice
  • 4 Soft Boiled Eggs
  • 4 Green Onions, Diced
  • 1 Cup Pickled Carrots
  • 2 Tbsp Sesame Seeds
  • 2 Packages Seaweed Snacks
  • 2 Jalapenos, Thinly Sliced

Serves: 4

Time: 45 Minutes

To Make:

  1. In a mixing bowl, whisk together the gochujang, miso, rice vinegar, soy sauce, minced ginger and minced garlic and well combined and smooth.
  2. Using a paper towel, dry the shrimp to remove any excess moisture. Cut the shrimp in to bite size pieces and add to the marinade.
  3. Set aside and let the shrimp marinate for 20-30 minutes.
  4. While the shrimp marinades, prep all the other ingredients you want to put in your bowl – make the rice, slice the cucumber and jalapenos, boil the eggs (for soft boiled – boil for 6 minutes then immediately place in an ice bath to cool for 5 minutes before peeling).
  5. When you are ready to make the shrimp, separate the shrimp and marinade. Then heat a large pan over medium to high heat. Once hot, add in the marinade first (I know this sounds backwards, but shrimp cooks quickly and the sauce needs some time to thicken up so we need to boil off the water first). Cook the marinade for 8-10 minutes, stirring frequently until thickened.
  6. Once the sauce has thickened, reduce the heat to low-medium and add the shrimp. Cook for another 8-10 minutes, stirring frequently until the shrimp is fully cooked.
  7. Next serve up your bowls – divide the shrimp between 4 bowls and serve with rice, sliced cucumber, pickled carrots, soft boiled egg, diced green onions and any other toppings you want!
