I’m pretty sure I found one of the best restaurants in Denver, and I’m already counting down the days until I can go back. The spot is called ChoLon, and it’s a wonderful place for either lunch or dinner. My husband and I loved it so much that we went there twice on our short trip—first for dinner on our first night, and then again for lunch two days later because we just had to have more.

ChoLon is known for its incredible fusion dishes, and you will find some truly wonderful creations on their menu that I have never seen anywhere else. A quick tip: if you’re planning a weekend dinner, I would definitely recommend making a reservation, especially if you have a larger group.

Honestly, I don’t think there was a single dish we tried that we didn’t love, which is why I have to insist you go with a few people so you can share and try as much as possible! It’s hard to pick favorites when everything is so good, but a few dishes truly live in my head rent-free.

First, the French Onion Soup Dumplings. I could have honestly eaten over a dozen of these. They are so perfect, absolutely full of flavor, and so warm and comforting. The Crispy Chicken Spring Rolls with Cilantro Yogurt were also a standout—perfectly crispy and flavorful, and the coolness of the yogurt dip was a perfect match. We also ordered the Salt and Pepper Calamari, which was so light and tender it might be some of the best calamari I have ever had.

I also can’t stop thinking about the Shrimp Cake Bao Bun. The bun itself was pillowy soft, and it was filled with a crispy yet light shrimp cake and a creamy dill sauce. Another dish I should have ordered just for myself was the Scallion Pancake with Hoisin Butter. It was unreal, and I definitely regretted having to share it! Finally, the Chiang Mai Wontons were the perfect combination of a little spice, a little sweetness, and a little tang, and they were so moist inside.

I’m pretty sure I just mentioned half the menu, but that’s how good this place is. ChoLon gets 5 stars from me for flavor, creativity, and service. Every dish is stunning and packed with flavor. You absolutely have to add this to your Denver itinerary.
