Birrieria Guadalajara

If you didn’t guess from the name, this spot specializes in birria! Not only do they have birria tacos, but they have birria ramen, birria tortas, and more! The birria ramen looked and sounded divine, but in staying true to birria, we went with birria tacos! The birria tacos come loaded with the slow braised meat and served with cilantro, diced onions, and consomme. The braised meat and consomme were so rich and tender with a subtle amount of heat that was just enough to make ya feel something. I will say though, the tortillas were a bit on the soggy side, which I know that the meat is so juicy, but I would have loved for the tortillas to be crispier as that would have just been the perfect texture. I would still go back to this spot because it was super flavorful, easy, and quick without sacrificing quality.
