Easy Loaded Sandwich

I love a filling sandwich, but I hate paying $10 for a sandwich…because in this economy who can afford that?! And sandwiches are too easy to make at home for me to justify eating out. Another great thing about sandwiches is you can pretty much throw anything on there and it most likely will taste good! The one thing I always try to do though is have lots of colors and something salty, something creamy, and something crunchy. If you follow those suggestions then you really can’t go wrong.

Now go make the sandwich of your dreams!

Makes: 2 Sandwiches

Total Time: 15 Minutes

Ingredients:

  • 4 Slices of Sourdough, Toasted
  • 1 Avocado
  • 1/2 – 1 Lime
  • 1/2 Cup Kalamata Olives, Sliced
  • 1/2 Cup Shredded Red Cabbage
  • 1/2 Cup Shredded Carrots
  • 2-4 Tbsp Mayonnaise
  • Salt + Pepper, To Taste
  • 1 Cup Roasted Sweet Potatoes
  • Optional: Sliced Turkey Meat
  • Other Optional Veggies: Sliced Tomatoes, Pickles, Cucumbers, Lettuce, Roasted Red Peppers

To Make:

  1. First we need to make our quick avocado mash. Cut the avocado, score it, and scoop it out into a bowl. Add a pinch of salt and pepper and the juice of 1/2 of a lime (about 1/2 – 1 tbsp). Carefully mash with a fork and mix to incorporate everything – taste and adjust the seasonings. Set aside.
  2. Next, toast your bread – you can do this in the oven, a toaster, or air fryer. Toast to your liking.
  3. While the bread toasts, use this time to prep your remaining ingredients (these can be the same ones that I used, or whatever you have in your fridge).
  4. When everything is finished, we can assemble the sandwiches.
  5. Lay out your 4 pieces of bread. On two of the pieces of bread, divide the avocado mash and spread evenly. Add half of the shredded red cabbage on each piece of toast. Next add the shredded carrots, then roasted sweet potatoes, and turkey if using.
  6. Lastly, take the other pieces of toast and spread 1-2 tbsp of mayonnaise on top. Place these mayo side down on top of your assembled sandwich. Slice in half and enjoy!
