Quick Chicken Nugget “Katsu” Bowls

Okay, so this is absolutely not real Katsu…and I mean no offense to anyone by making this dish and calling it “Katsu” – hence the “”. But sometimes you want something delicious and you have to work with what you have. This simple dish came about when I was craving some Katsu with a cabbage slaw + sesame dressing but I literally had nothing in my kitchen to actually make Katsu, so my genius idea was to use chicken nuggets and cover them in a bachan sauce I had – literally called “The Original Japanese Barbeque Sauce”. It is the most similar to a Katsu sauce without actually making one. I absolutely LOVE authentic Japanese Katsu and fell in love with it when I was in Tokyo. The craving hits me every few weeks, but truth be told, Katsu is a labor of love that I usually don’t have time for. One of the reasons I love it so much is you have this warm, crispy meat with a savory sauce and then you have this cold, crunchy cabbage with a creamy, tangy sesame dressing. They compliment each other so well and it is one of my favorite combinations.

Prep Time: 5 Minutes

Cook Time: 20 Minutes*

Total Time: 25 Minutes

*cook Time will depend on your cooking method, I use the air fryer.

Ingredients:

  • 8-12 Chicken Nuggets (I use the brand Bare)
  • 1/2 Cup Jasmine Rice, Cooked
  • 1/2 Cup Diced Cucumber
  • 1-2 Cups Sliced Green Cabbage
  • 1/4 Cup Sesame Dressing
  • 2-3 Tbsp Japanese BaChan Sauce

To Make:

  1. First we need to make the chicken nuggets – I like to make my nuggets in the Air Fryer. Cook the chicken nuggets according to the directions for whatever brand you’re using.
  2. While the nuggets are cooking, prep everything else. Cut up the cucumber, get the cabbage and rice ready.
  3. Next, start assembling your plate. Add the 1/2 cooked rice to the bowl, top it with the cucumbers, then add the cabbage on the side. At this point go ahead and drizzle on the sesame dressing – I recommend starting light and adjusting to your preferences.
  4. Once the nuggets are ready to go, add them on top of the rice and drizzle on the Japanese Bachan Sauce! You can also sprinkle with diced green onions and sesame seeds for garnish and enjoy!
