
Sheet Pan Kofta is such an easy, delicious way to mix it up! It comes together super quick and can be eaten in so many different ways – wrap it up in a lavash with veggies, put it on a flatbread with tzatziki, or eat it straight up with a fork! The Kofta has so much flavor and stays juicy and tender while cooking. This is also a perfect option for prepping ahead for the week since you can make a large batch and then reheat when you’re ready to eat it. I prefer eating this in a wrap or pita with plenty of tzatziki, cucumber + tomatoes, kalamata olives, and hummus. I also love making this into a bowl when I am trying to get some more veggies in my day – think roasted veggies like carrots and broccoli and cauliflower!

For the Kofta:
- 1 lb Ground Turkey
- 2 Garlic Cloves, Minced
- 2 Tsp Minced Ginger
- 1 Tsp Garlic Powder
- 1 Tsp Garlic Powder
- 2 Tsp Cumin
- 2 Tsp Smoked Paprika
- 2 Tsp Salt
- 1 Tsp Pepper
- 1 Lemon, Juiced
- 1/4 Cup Parsley, Finely Chopped

To Make:
- First, preheat the oven to 400 degrees Fahrenheit.
- Next, grab a large mixing bowl and add in all of the ingredients and mix well. Set aside to let rest for about 10 minutes.
- When you are ready to cook, transfer the turkey to a sheet pan and press into a flat, rectangle that is about 2-3cm.
- Now, using a spatula (or you can use a dull knife), make a vertical line down the turkey every 1-1.5 inches. This will make it so you can break the turkey into long, skinny portions that are perfect for the pita.
- Place the sheet pan in the oven and cook for 20 minutes. After 20 minutes, check the turkey – you may need to drain any excess fat using paper towels just to prevent excess moisture. Place back in the oven for another 5 minutes.
- This next step is optional, but once the turkey is finished cooking, I like to remove it from the oven and set the oven to broil. When it is ready, place the turkey back in the oven for just 2 minutes to get the top a little crispy!
- Serve on a pita or flatbread with cucumbers, tomatoes, hummus, tzatziki or use them in a bowl with your favorite roasted vegetables!
