Turkey Lettuce Cups

This is one of my all time favorite meals to make in our home! It is so easy, so flavorful and packs a lot of vegetables. It reminds me of the lettuce wraps you’d find at a lot of Asian restaurants, but this version is made with turkey and probably less msg. You can also throw in any vegetables you want, but my non-negotiables are mushrooms, onion, and bell peppers! I also love topping this with a Greek yogurt based sauce that I mix with lime juice and Sriracha – it adds a little bit of heat and tang that compliments the turkey beautifully. Feel free to use ground chicken or ground beef with this as well if you prefer those to turkey. You could also probably use tofu, but I personally haven’t tried that variation!

Ingredients:

  • 1lb Ground Turkey
  • 1 Red Bell Pepper, Diced
  • 1 Yellow Onion, Diced
  • 4 Green Onions, Chopped
  • 1/2 Cup Corn
  • 8oz Crimini Mushrooms, Trimmed + Diced
  • 1 Tbsp Minced Garlic
  • 1/2 Tbsp Minced Ginger
  • 4 Tbsp Dark Soy Sauce
  • 2 Tbsp Rice Vinegar
  • 2 Tbsp Mirin
  • 1 Tbsp GoChuJang
  • 2 Tsp Sesame Oil, For Cooking

For Serving:

  • Sesame Seeds
  • Romaine Lettuce Leafs
  • Sriracha Lime Dressing
  • Diced Green Onions

To Make:

  1. This recipe goes pretty quick, so the first thing we want to do is prep all of the ingredients to get everything ready. Start by dicing the yellow onion and red bell pepper and slicing the mushrooms. Add the yellow onion, red bell pepper, and mushrooms into a bowl together. Next, chop the green onions and add those to a small bowl by themselves.
  2. In a small bowl, mix together the 4 tbsp dark soy sauce, 2 tbsp rice vinegar, 2 tbsp mirin, 1 Tbsp GoChuJang, 1 Tbsp minced garlic, and 1/2 tbsp minced ginger. Mix until well combined and set aside.
  3. Now that we have everything prepped, heat a large pan over medium heat. Once hot, add the 2 tsp sesame oil. Add in the yellow onions, bell peppers, and mushrooms. Cook for 8-10 minutes, stirring frequently, until the vegetables soften.
  4. Next, add in the 1lb ground turkey and let it brown for 2-3 minutes before breaking it apart and stirring it around. Continue cooking the turkey for another 8 minutes. At this point, the turkey will almost be fully cooked and it will have released fat and moisture. Carefully drain the excess moisture and fat and return the pan to the stove top.
  5. Once the fat has been drained, add in the corn, green onions, and the sauce we made earlier. Stir to combine. Continue cooking until the sauce begins to thicken – about 8 minutes.
  6. After the sauce has thickened, remove from heat and it’s time to serve! Grab a whole leaf of romaine lettuce and carefully spoon in the turkey mixture. Repeat until all of the turkey has been used.
  7. Drizzle on a sriracha lime dressing, top with more diced green onions + sesame seeds, and enjoy!
