Smashed Chicken Caesar Tacos

Y’all! This dish is one for the weekly rotation. It is super easy, so flavorful, and a fun way to eat a Caesar salad. Plus, who doesn’t love tacos? This is the perfect meal for the summertime because it is light and easy, but will leave you satisfied and hit all the tastebuds. The crispy tortilla with the well seasoned ground chicken and the creamy Caesar dressing is such a match made in heaven. I also love adding a squeeze of lime juice and some kalamata olives – both add some tang and acidity that brightens the tacos.

Cook Time: 30 Minutes

Total Time: 40 Minutes

Ingredients:

For the Chicken:

  • 1 Lb Ground Turkey
  • 1 Tsp Salt
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • ½ Tsp Smoked Paprika
  • ½ Tsp Basil
  • ½ Tsp Oregano

For the Caesar Salad:

  • 4 Cups Shredded Romaine
  • ¼ Cup Caesar Dressing, Use your favorite!

Additional Ingredients:

  • 6-8 Carb Balance Tortillas (4 to 6in in size)
  • ¼ Cup Freshly Grated Parmesan Cheese
  • ½ Cup Sliced Cherry Tomatoes

To Make:

  1. In a large mixing bowl, add the ground chicken, salt, garlic powder, onion powder, smoked paprika, basil, and oregano and mix well so the mixture is evenly combined. Set aside. 
  2. While the meat mixture rests, let’s prepare everything else you need or want for the tacos. In a large bowl, mix the romaine lettuce and caesar dressing. Slice the cherry tomatoes and prepare any other ingredients you want for the tacos. 
  3. Next, let’s prepare the tacos. These are smash tacos, so we will be pressing the mixture on to the tortillas before we cook them. The best way to do this is to prepare all the tortillas before we start cooking them; I recommend laying out all the tortillas – you’ll need 6-8. Divide the mixture evenly between all the tortillas and place it in a ball in the center of the tortilla. Take one tortilla and using your hand, gently press the meat mixture down and spread it around the tortilla so there is a thin layer covering the entire tortilla. 
  4. Repeat step 3 until all the tortillas are prepped. 
  5. When you are ready to cook, heat a large pan over medium heat. Once hot, spray avocado oil to lightly coat the surface. 
  6. Take a tortilla and place it meat mixture down onto the pan. You want to make sure these stay flat, so only add as many tortillas as you can to keep them flat. Cook meat side down for 8 minutes. Flip the tortillas and cook tortilla side down for another 3-5 minutes until the tortilla starts to get a little crispy. Remove from the pan and set aside. 
  7. Repeat step 6 until all of the tortillas have been cooked. 
  8. After all of the tortillas have been cooked, fill them with caesar salad romaine, diced tomatoes, and grate a little bit of parmesan cheese on top! Feel free to get creative with the toppings!
