Honey Chicken Smashed Burger

Sometimes you need a juicy burger and why not make it at home? While these aren’t beef patties, these chicken patties will have you questioning if beef patties are even superior burgers. I love me a good beef burger, but honestly I might take these chicken burgers any day. Especially with the sweet honey, the tangy & creamy sauce, and the toasted brioche bun…like oh my gawd. You can dress up this burger as much or as little as you want, but a few non-negotiables are the cheese, the sauce, and the honey…oh and the brioche buns! If you can’t find brioche, that is okay; they are just so soft and buttery. You can also kick these up a notch by using hot honey and throw some hot sauce in the sauce or directly on the burger.

Makes: 4 Double Smashed Burgers

Prep Time: 15 Minutes

Cook Time: 45 Minutes (you can cook faster if you use multiple pans, but my pan only fits 2 burger patties at a time)

Total Time: 60 Minutes

For the Chicken Burger:

  • 1 Lb Ground Chicken
  • 4 Garlic Cloves, Minced
  • 2 Tsp Onion Powder
  • 2 Tsp Garlic Powder
  • 3 Tsp Smoked Paprika
  • 1 Tsp Basil
  • 1 Tsp Oregano
  • Salt + Pepper, To Taste
  • 4-6 Tbsp Honey

For the Spread:

  • 1 Cup Greek Yogurt
  • 4 Garlic Cloves, Minced
  • 1 Tbsp Fresh Dill, Minced
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 3 Tbsp Pickle Juice
  • Salt + Pepper, To Taste

Additional Ingredients:

  • 4 Brioche Buns
  • 8 Slices Sharp Cheddar Cheese
  • Shredded Lettuce
  • Sliced Tomatoes
  • Pickles
  • Olive Oil for Cooking

To Make:

  1. Let’s get everything prepped first so the cooking is a breeze. First let’s make the chicken mixture. In a large mixing bowl, mix together the ground chicken, minced garlic cloves, onion powder, garlic powder, smoked paprika, basil, oregano, and salt + pepper. Mix everything well to combine.
  2. Next, form the patties. Divide the chicken mixture into 8 equal balls and set them aside until you are ready to cook.
  3. Next, let’s make the spread. In a small bowl add the greek yogurt, minced garlic, fresh dill, garlic powder, onion powder, pickle juice, and salt + pepper to taste. Stir to combine well and set aside.
  4. Before we get cooking, prep any other burger fixings you want – slice the tomatoes, get the cheese ready, chop the lettuce, etc!
  5. When you are ready to go, we are going to toast the buns first. Heat a large pan over medium – low heat. Once hot, add in a drizzle of olive oil and spread around. Add the buns face down to toast – you will likely only get two buns (so Four halves) into the pan so you will need to do this in two batches. Toast the buns for around 5 minutes so they get a little toasty but not burned. (alternatively you can toast these in the oven, toaster, or air fryer). Remove the buns and set them on a plate to the side.
  6. Now for the burgers, turn the heat up to medium-high and drizzle in a touch more olive oil once the pan is hot. Add two of the burger balls and immediately smash them flat using the back of a spatula (you can also place a piece of parchment paper on top of the burger and use your hands to carefully smash).
  7. On top of the burgers, add a squeeze of honey and cook for 3 minutes. Flip the burgers, add once more squeeze of honey on top, reduce the heat to low, add one slice of cheese to each burger patty (if using), cover and cook for another 5 minutes.
  8. Once the burger is cooked and the cheese is melted, stack two patties together, remove from the pan and set on a plate to cook the remaining patties before assembling the burgers.
  9. Repeat steps 6-8 until all the burgers have been cooked!
  10. When the burger patties are finished, it is time to assemble. Take the bottom half of the toasted bun, add a generous helping of the spread we made earlier, top with 2 smashed patties, add any additional toppings – lettuce, tomatoes, pickles, etc, and place the top toasted bun on top!
