
Do you love spring rolls dunked in creamy peanut sauce, but struggle to wrap them? Well then you are with me! There is nothing more delicious than a perfectly wrapped spring roll with crunchy veggies, warm beef or pork, and dipped into a thick, creamy, tangy peanut sauce. If you are like me though, wrapping skills are not a strong skill of mine. I have tried and tried to get better at wrapping spring rolls and every time they always break or are too loose…it is a struggle! But now, you can have all the wonderful flavors and textures of a spring roll without the hassle of wrapping them!
For the Bowls:
- 1 Cup Grated Carrots
- 1 Cup Pickled Carrots (Optional)
- 1 Cucumber, Thinly Sliced
- 1/2 Cup Peanuts, Finely Chopped
- 2 Cups Purple Cabbage, Shredded
- 4 Green Onions, Finely Diced
- 1/2 Cup Cilantro, Finely Chopped
- 1 Box Vermicelli Noodles, Cooked (Follow Package Instructions)
- 2 Cups Cooked Chicken (Optional – can swap with favorite protein or use rotisserie chicken)
For the Peanut Sauce:
- 1/2 Cup Peanut Butter
- 1 Tbsp Soy Sauce
- 1 Tbsp Rice Vinegar
- 1 Tbsp Minced Garlic
- 2-4 Tbsp Coconut Milk (Can also use Water)
Serves: 2-4
Prep Time: 30 Minutes; Assembly Time: 15 Minutes; Total Time: 45 Minutes

To Make:
- Start by prepping all the ingredients – this will take some time but it will make things go quicker and make assembly much easier! I recommend prepping all the items you will use in the bowl and placing them in separate bowls or on a plate.
- Next, make the peanut sauce. In a small bowl, whisk together the following – 1/2 cup peanut butter, 1 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp minced garlic, and 2 tbsp coconut milk (or sub water). Whisk until well combined. At this point, if you want a thinner peanut sauce, you can add more coconut milk (or water) – I recommend only adding about a tbsp at a time until you reach the consistency you want.
- Once all the ingredients are prepped, it is time to assemble the bowls! Grab two large bowls (or plates) and divide the carrots, cucumbers, noodles, cabbage, cilantro, green onions, peanuts, and chicken (if using) equally between the two bowls.
- Drizzle a generous helping of peanut sauce on each bowl. Mix well to combine and get all the toppings and sauce incorporated and enjoy!
