Lemongrass Chicken Meatballs

These super easy Chicken Meatballs will be your new favorite! The lemongrass adds a wonderful, fresh flavor and the gochujang packs a punch of heat. This dish goes great with rice and a grilled vegetable plus a drizzle of peanut sauce for an extra creminess richness on top! The meatballs come together in about 30 minutes, making it a great option for an easy weeknight dinner when you are short on time. You could also make these ahead of time for the week and reheat.

For the Meatballs:

  • 1 Lb Ground Chicken
  • 2 Tbsp GoChuJang
  • 2 Tbsp Lemongrass Paste
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Rice Vinegar
  • 2 Tbsp Minced Garlic
  • 1 Tbsp Minced Ginger
  • 1 Lime, Juiced
  • 3 Green Onions, Finely Diced
  • Oil Spray (Pam, Avocado Oil) for Cooking

Optional for Serving:

  • Grilled Zucchini
  • Rice
  • Peanut Sauce
  • Green Onions
  • Sesame Seeds

Serves: 3-4

Prep Time: 15 Minutes; Cook Time: 20 Minutes; Total Time: 35 Minutes

To Make:

  1. In a large mixing bowl, combine the following – 1lb ground chicken, 2 tbsp gochujang, 2 tbsp lemongrass paste, 2 tbsp soy sauce, 1 tbsp rice vinegar, 2 tbsp minced garlic, 1 tbsp minced ginger, juice of 1 lime, and 3 finely diced green onions.
  2. Using a spoon or scoop, form 12-14 balls with the chicken mixture and place on a plate.
  3. Heat a large pan over medium heat and spray the pan with your choice of oil to prevent sticking. Once hot, add in the meatballs in a single layer, making sure not to overcrowd the pan so they will cook evenly.
  4. Cover and cook for 8 minutes.
  5. Flip the meatballs, cover again and cook for another 5 minutes.
  6. Remove the lid from the meatballs and continue cooking uncovered for 3 minutes.
  7. Turn off the heat and remove the pan from the stove. Divide the meatballs between 4 dishes and serve with rice, grilled zucchini, diced green onions, sesame seeds and a drizzle of peanut sauce!
