
These super easy Chicken Meatballs will be your new favorite! The lemongrass adds a wonderful, fresh flavor and the gochujang packs a punch of heat. This dish goes great with rice and a grilled vegetable plus a drizzle of peanut sauce for an extra creminess richness on top! The meatballs come together in about 30 minutes, making it a great option for an easy weeknight dinner when you are short on time. You could also make these ahead of time for the week and reheat.
For the Meatballs:
- 1 Lb Ground Chicken
- 2 Tbsp GoChuJang
- 2 Tbsp Lemongrass Paste
- 2 Tbsp Soy Sauce
- 1 Tbsp Rice Vinegar
- 2 Tbsp Minced Garlic
- 1 Tbsp Minced Ginger
- 1 Lime, Juiced
- 3 Green Onions, Finely Diced
- Oil Spray (Pam, Avocado Oil) for Cooking
Optional for Serving:
- Grilled Zucchini
- Rice
- Peanut Sauce
- Green Onions
- Sesame Seeds
Serves: 3-4
Prep Time: 15 Minutes; Cook Time: 20 Minutes; Total Time: 35 Minutes

To Make:
- In a large mixing bowl, combine the following – 1lb ground chicken, 2 tbsp gochujang, 2 tbsp lemongrass paste, 2 tbsp soy sauce, 1 tbsp rice vinegar, 2 tbsp minced garlic, 1 tbsp minced ginger, juice of 1 lime, and 3 finely diced green onions.
- Using a spoon or scoop, form 12-14 balls with the chicken mixture and place on a plate.
- Heat a large pan over medium heat and spray the pan with your choice of oil to prevent sticking. Once hot, add in the meatballs in a single layer, making sure not to overcrowd the pan so they will cook evenly.
- Cover and cook for 8 minutes.
- Flip the meatballs, cover again and cook for another 5 minutes.
- Remove the lid from the meatballs and continue cooking uncovered for 3 minutes.
- Turn off the heat and remove the pan from the stove. Divide the meatballs between 4 dishes and serve with rice, grilled zucchini, diced green onions, sesame seeds and a drizzle of peanut sauce!
