Asian Inspired Meatballs with Peanut Sauce

Juicy, tangy meatballs with a creamy, peanut sauce! Sere this alongside your favorite grilled veggie and rice and you have a delicious, hearty meal that will send your tastebuds soaring. This dish comes together quickly and doesn’t use too many ingredients, most of which you probably already have in your pantry.

For the Meatballs:

  • 1 Lb Ground Turkey
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Minced Ginger
  • 2 Tbsp Rice Vinegar
  • 1 Tbsp Sriracha
  • 3 Tbsp Minced Garlic
  • 3 Green Onions, Finely Diced
  • 1/3 Cup Panko Breadcrumbs
  • 1 Tbsp Oil of Choice, for Cooking

For the Peanut Sauce:

  • 1/2 Cup Peanut Sauce
  • 1 Lime, Juiced
  • 1 Tbsp Minced Garlic
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Rice Vinegar
  • Water to thin (for a creamier sauce, use coconut milk instead of water)

Optional for Serving:

  • Sesame Seeds
  • Cooked Rice
  • Diced Green Onions
  • Grilled Bok Choy or favorite Vegetable

Serves: 4

Prep Time: 20 Minutes; Cook Time: 20 Minutes; Total Time: 40 Minutes

To Make:

  1. In a large bowl, combine the following – ground turkey, 2 tbsp soy sauce, 2 tbsp minced ginger, 2 tbsp rice vinegar, 1 tbsp sriracha, 3 tbsp minced garlic, 3 finely diced green onions, and 1/3 cup panko breadcrumbs. Mix well until all the ingredients are well combined. Set aside.
  2. Next, let’s make the peanut sauce. In a bowl combine the following – 1/2 cup peanut butter, juice of 1 lime, 1 tbsp minced garlic, 3 tbsp soy sauce, and 2 tbsp rice vinegar. Whisk well until all the ingredients come together. Slowly add water (or coconut milk) until the sauce is to your liking (I usually add about 2 tbsp so it is thin enough to drizzle but is still thick enough to stick). Set the sauce to the side until you’re ready for serving.
  3. Now back to the turkey mixture to form the meatballs. Using a spoon (or you can use a scooper), form 12-14 meatballs (about the size of a golf ball) and set on a plate.
  4. Next, heat a large pan over medium heat and add in 1 tbsp of oil (I use peanut oil for this recipe). Once hot, carefully place your meatballs in a single layer, cover and cook for 8 minutes.
  5. Flip the meatballs, cover and continue cooking for another 5 minutes.
  6. Uncover the meatballs and keep the heat on medium, continue cooking uncovered for another 3 minutes.
  7. Turn off the heat and remove the pan from the stove. Divide the meatballs between 4 bowls. Serve alongside rice and bok choy, if desired. Top the meatballs with sesame seeds, diced green onions, and drizzle with peanut sauce!
