GoChuJang Salmon Bites

I have made these salmon bites more than I would like to admit! I love the flavor – spicy and salty. And I love trying new toppings with them. You’ll notice different bowls in this recipe with vastly different toppings – that’s to highlight how customizable this dish can be and still have the same base and deliciousness! I have tried a few methods when it comes to cooking these salmon bites as well. Oven vs AirFryer – which is better? It comes down to personal preference. The oven is going to take more time, but you will find the salmon will be a bit juicier and you can cook the whole batch with one go. The AirFryer takes considerably less time, but you have to do it in batches (unless you have a ginormous airfryer) but the salmon will be crispier. Try both methods and let me know what you think.

For the Salmon:

  • 1.5 Lb Salmon, Skin Removed and Sliced into ~1inch cubes
  • 3 Heaping Tbsp GoChuJang
  • 1/4 Cup Rice Vinegar
  • 1 Lime, Juiced
  • 1/4 Cup Soy Sauce
  • 1 Tbsp Minced Ginger
  • 2 Tbsp Minced Garlic
  • 1 Tbsp Sesame Seeds

Optional for Serving:

  • Rice
  • Nori
  • Cucumbers
  • Pickled Carrots
  • Green Onions
  • Spicy Mayo
  • Sliced Avocado
  • Sesame Seeds

Serves: 4

Prep Time: 30 Minutes; Cook Time: 30 (varies by method); Total Time: 1 Hour

To Make in the Oven:

  1. Grab a large mixing bowl and add the gochujang, rice vinegar, lime juice, soy sauce, minced garlic, minced ginger, and sesame seeds. Whisk to combine – really make sure the gochujang gets all mixed in.
  2. Add in the salmon chunks and make sure all the salmon gets evenly coated. Set aside and allow to marinate for 20 minutes.
  3. While the salmon marinades, preheat the oven to 350 degrees Fahrenheit.
  4. Place the salmon (spread out) on a large baking sheet making sure you don’t transfer too much excess marinade.
  5. Place the salmon in the oven and bake at 350 degrees Fahrenheit for 20 minutes.
  6. Remove the salmon from the oven and turn the oven to “broil” mode. Place the salmon back in the oven for 3-5 minutes. You will want to turn the oven light on so you can watch the salmon. At about 3 minutes the salmon should start bubbling and forming a charred outside. Make sure to watch to prevent the salmon from burning.
  7. Remove the salmon and turn the oven off. Divide the salmon between 4 bowls and serve with your favorite toppings!

To Make in the AirFryer:

  1. Grab a large mixing bowl and add the gochujang, rice vinegar, lime juice, soy sauce, minced garlic, minced ginger, and sesame seeds. Whisk to combine – really make sure the gochujang gets all mixed in.
  2. Add in the salmon chunks and make sure all the salmon gets evenly coated. Set aside and allow to marinate for 20 minutes.
  3. Line your AirFryer basket with foil (I find this makes it easier to get the fish out without it sticking and falling apart).
  4. Add a small portion of the salmon chunks to the basket (you don’t want it to be too crowded or the salmon won’t cook evenly).
  5. Place the basket in the AirFryer and cook at 400 degrees Fahrenheit for 12 minutes.
  6. Remove from the AirFryer and transfer to the cooked salmon to a plate or bowl and cover to keep warm.
  7. Repeat steps 4-6 until all the salmon has been cooked.
  8. Divide the salmon between 4 bowls and serve with your favorite toppings!
