Grilled Chicken Gyro Bowls

Cava who? I love Cava, but you can recreate their simple, delicious meals at home for a fraction of the price! My chicken gyro bowls will be your new weeknight favorite with quick and easy prep and customizable toppings for the whole family to get involved and enjoy. The chicken is so tender and flavorful and makes for a filling, but light dinner. If you want to take this up a notch, make your own tzatziki using greek yogurt, lemon juice, garlic, fresh dill and diced cucumbers that comes together so quick and tastes so much better than the store bought versions. Also, if you aren’t feeling adventurous to go outside and grill, you can bake the chicken and then finish it off in the broil setting for 4-5 minutes right before serving!

For the Chicken:

  • 2 Chicken Breasts, Cubed (about 1-1.5lbs)
  • 1/3 Cup Greek Yogurt
  • 1/4 Cup Harissa
  • 1 Lemon, Juiced
  • 2 Tsp Garlic Powder
  • 2 Tsp Onion Powder
  • 1 Tsp Salt
  • 1 Tsp Cumin
  • 1 Tsp Smoke Paprika
  • 1 Tsp Turmeric
  • 2 Tsp Minced Ginger

Additional Ingredients:

  • 3-4 Cups Shredded Romain
  • 1 Cup Cherry Tomatoes, Halved
  • 1/3 Cup Kalamata Olives, Halved
  • 2 Cups Cooked Jasmine Rice
  • 1/2 Cup Crumbled Feta
  • 1/2 Cucumber, Quartered
  • 1/2 Cup Tzatziki

To Make:

  1. In a large mixing bowl, stir together the greek yogurt, harissa, lemon juice and seasonings. Add in the cubed chicken breast and stir to evenly coat. Set aside and allow to marinate for at least 30 minutes.
  2. While the chicken marinades, use this time to prep all your other toppings for the bowls!
  3. When ready to cook, heat the grill to 450 degrees fahrenheit. While the grill heats, skewer the chicken, using metal skewers. Pour any remaining marinade on top.
  4. Add the chicken skewers to the grill, close and cook for 6 minutes. Using tongs, flip the chicken, cover and cook for another 6 minutes, or until the chicken is fully cooked through.
  5. Turn off the grill and remove the chicken. Allow to rest for 5 minutes.
  6. To assemble, add a generous helping of rice to the bottom of the bowl then top with chicken, romaine, tomatoes, olives, feta and tzatziki. Serve with pita, if desired, and enjoy!
